We too would eat roast meat on pesach except for the seder.
No roasted meat of any kind for seder.

Since we never get lamb here - the minhag of wheter or not to eat lamb is irrelevant ( can you do fried or boild lamb anyway ?)

We eat tons of meat and potatoes on Pesach not much else for use to eat.

We do braised lamb on sedar. In our custom, prohibition is against dry-roasted or roast over open fire.
Our other traditional foods are mina (baked matza casserole layered with ground beef filling), braised celery with lemon juice, leek patties.
