I would like to make the batter once and then fry as needed. How long can the batter stay in the fridge?

I wouldn't keep it longer than a few hours, if that.
Mimi, it's like latkes, except from cooked, mashed potatoes.

sort of. It's mashed potatoes, eggs, spices and sometimes starch or matza meal, made into patties and fried. It's a bit thicker than latkes and tastes very differnent.
It's a traditional pesach food, I don't know anyone who really makes it all year around.
