can someone post a pesach potato kugel ?

(From another thread I posted on:)
I make the same recipe for Pesach potato kugel as usual (except swap chicken fat for oil):
For a 9x13 pan use:
9 Idaho potatos
8 eggs
3 tsp salt
lots of ground black pepper
very small onion
oil
-Pour enough oil in pan to cover and come up around 1/2" the side of the pan. Heat at 550 degrees (yes you read right- it's what makes a crispy crust).
-Beat eggs with salt and pepper in large heatproof bowl.
-Peel potato and onion and grate in food processor with kugel blade. Add to eggs and mix well so all egg is incorporated with potatos.
-Carefully remove pan with hot oil and pour part of the oil into the potatos. Mix with a spoon till incorporated. Pour mixture back in pan and bake for around 1 hour, maybe a drop more (yes, at 550) till brown and crusty.

just curious
besides using shmaltz in place of veg. oil,
what on earth is someone putting in their potato kugel that it requires a different recipe from the rest of the yr?

potato kugel with flour?
I thought all potato kugels were just
potatoes
eggs
oil
salt
and then some people add these spices:
garlic or onions
pepper
some people add this for fluffiness:
seltzer
why add flour to potato kugel? what does it do? you already have POTATOES why do youneed flour ? I have never heard of this

Here is the Traditional Potato Kugel (Passover by Design)
1/2 cup vegetable oil
8 med potatoes
2 med onions
1 Tbsp fine sea salt (I just used regular)
1 tsp pepper
2 1/2 Tbsp sugar
5 large eggs, beaten
1. Preheat oven to 425
2. Place oil into large 9 x 13 pan and set aside
3. Fill a large bowl with cold water and add some ice cubes. Peel potatoes and place them into the bowl of cold water to prevent them from turning brown.
4. Fnely chop onions in food processor (metal blade). Remove them to a large bowl. Cut potatoes into chunks and place them into the food processor; process until almost smooth. Add potatoes to the onions.
5. Add salt, pepper, and sugar to the potato mixture. Ad the eggs and stir until thoroughly combined.
6. Place the baking pan with oil into the oven. When the oil sizzles, carefully remove from oven and spoon some of it into the potato mixture. Pour the potatoes into the oiled pan. Bake uncovered for one hour.
This is one of the yummiest recipes for potato kugel. I don't have a processor for Pesach, so I just grated it and it came out fine. I also doubled the recipe and used six eggs and made it into a cholent for Shabbos.

a lot of people add flour/matzo meal/or some such filler ... not sure why
4 potatoes - peeled and grated by hand
2 eggs
1 onion
garlic powder
black pepper
salt
fry in small pan with olive oil ...
comes out like a big latke ... yummmmmmm
