how closely do you follow a recipe?

I will often make a dairy recipe pareve.
I will often eyeball spices instead of doing exact.
If I don't have an ingredient, I replace similar items.

DH and I have an ongoing discussion about this. I eyeball everything and never measure (when cooking). This is why I don't like baking- because it's more of a science. So if I bake, I use the measuring cups but I don't make it perfectly level. DH thinks you should measure perfectly and is always amazed when my food comes out delicious anyway .

The best fun is when you have 2 or 3 recipes for the same thing~ I like to line them up and use the best parts of each of them!!!!!
