What to do with wheat/bulgur?

I accidentally bought wheat instead of brown rice. What can I make with it?

my SIL makes a really good salad with bulgur, chopped tomatoes, chickpeas and I think some chopped cucumber. She dresses it with some oil, lemon, salt, pepper and dried mint (I can't taste the mint anyway so I'd skip)

I cook it up with browned onions - I add it after the onions are browned, lightly toast it and then add hot water and salt to simmer. You can also add vegetables of your choice before the bulgur. (you can't do this with wheat, just bulgur, since it takes much longer to cook.)

I love using bulgur. It cooks so quickly, and is a whole grain and delicious.I also sautee onions and garlic, add the bulgur, water, salt and pepper and simmer a few minutes.
