Steam some cauliflower and then put it in the food processor with a little butter, half and half, salt and pepper.
If you want it parve, then just add a bit of margarine and salt and pepper.
It's yummy either way.

I also had a friend who made an amazingly quick recipe of placing frozen cauliflower on a baking pan sprinkled with olive oil salt and pepper and baking for an hour at 350 F. It would come out lightly browned and light, reminded me of fluffed mashed potatoes. I didn't quite master it, but it came out great at her place.
