I'm making marinated shnitzel and veggies on a skewer.
want to serve it with eggnoodles(the really thin pasta). when I make that I usually stir fry veggies and make it with soysauce, sugar. now I think that would be too much veggies.
so how can I make the pasta. I thought maybe boil and then fry some crushed garlic in olive oil and add some soysauce and sesame seeds?
any ideas please?

You can cook it and then toss it with your lightly sauteed garlic, some soy sauce, sliced scallions, ginger, sesame oil, etc.

If schnitzel is already marinated, I would keep the pasta very simple. Fry chopped garlic in olive oil, then just toss it with the noodle. Or cook the pasta, toss it with tomato sauce (or if you have ripe tomatoes, just plain chopped fresh tomatoes with a bit of salt and ground pepper would do).
just be careful not to overcook the angel hair. I usually coat it with a few drops of olive oil so that they don't all stick together.

egg-noodles and angel hair are totally different types of noodle ...
you can't have too many veggies ...

I just combine soy sauce, oil and sugar and toss the angel hair with that. I add sesame seeds and scallions to it and that's it. It goes over very well here.
