Zucchini Soup
3 T. canola oil (can use pam instead of oil, if you really want to keep it low calorie)
3 large onions, chopped
3 garlic cloves, roughly chopped
6-8 medium zucchini, with skin, ends trimmed, and cut into chunks
1 T. fresh parsley, chopped
1 T. fresh dill, chopped
1 T. fresh basil, chopped
(fresh herbs are obviously best, but I've substituted with dry herbs)
7 cups chicken broth, can use parve bouillon dissolved in water
salt
freshly ground black pepper
In a large pot, heat oil over medium-high heat. Add onions and garlic. Saute until translucent, about 5-7 minutes.
Add zucchini; saute 3-5 minutes. Add herbs; saute 3-3 minutes longer. Add the broth; bring to a boil. Simmer, covered, for 25 minutes.
Transfer soup in batches to the container of a blender; process until smooth. Or use an immersion blender right in the pot. Season with salt & pepper to taste.

cut up zucchini (skin on). add tomato sauce (if you are adding tomato sauce you don't taste any bitter stuff from the zucchini. cut up onion. after finished cooking add onion and garlic powder. voila. you can even add a few fresh cloves of garlic if you are so inclined. If you want extra taste add a tspn of oil. then add the onion. then add the zucchini and tomato sauce.
milchig:
same as above (though without oil). after finished cooking add a serving or two of low or nonfat cheese. mix. add onion and garlic pwder and oregano. I eat this instead of pizza. it is heavenly.

OT Octopus, but where can you find kosher nonfat cheese? Unless you mean cottage cheese?
