My husband's favorite vegetable dish. It goes well with spaghetti
and meatballs. It is also good cold.
Servings: 4

Ingredients:
1 medium onion
4 medium zucchinis
1 small can tomato paste
1 Tsp garlic powder
1 Tsp sugar
Salt and pepper to taste

Directions
1.Chop onion and sauté in a little oil
2. Peel zucchini, slice and add to pan.
3.Saute for 10-15 minutes on low flame, stirring occasionally
4. Remove from flame, add tomato paste and seasoning.
5. Mix well. Return to low heat and simmer for 5- 10 minutes.

I recently did a similar recipe but I also put in spinach. It was really yummy. My toddler eat it up.

Yup, this is delicious. My husband loves it too, and he is no zucchini or tomato paste fan. What he loves even more is a letcho version of this:

Saute plenty of onions and add green or red pepper and tomatoes, then add the zucchini. You need less tomato paste because you have tomatoes. I put in a couple cloves of garlic, but you can also use garlic powder. Add salt and pepper. You simmer on a low flame till the vegetables are soft and juicy.

This is also good cold, and for a balanced meal you stir in a few eggs over a low flame and spread the mixture over toasted bread. Cut the bread in quarters for easy eating.

My mother used to make this for seuda shlishis in the summer and use the leftovers for Sunday lunch, with eggs over toast.

Thanks for the recipe. I made it this past shabbos and dh loved it! I also had rice, so you could put the veg. dish on top of the rice, but the rice got a pretty dry when I reheated it b4 shabbos. any suggestions?
