this one is absolutely yummy and moist

HONEY CAKE
2 Eggs
½ C. oil
1 tsp vanilla
1 C. sugar
¾ C. honey
1 Tbsp cocoa
1 tsp cinnamon

Beat Eggs well, add sugar and rest of wet ingredients, add cocoa and cinnamon. Then:
2 C. flour
1 tsp baking soda
1 tsp baking powder
1 C. coffee (1 tsp coffee powder: 1 C hot H20)
Alternate flour mixture with Coffee.
Bake 350 in 9x13 or 2 loaf pans (it rises in the oven so leave room for growth…)
I think it takes about 45 minutes but definitely start checking after 30-35 minutes especially if you make it in smaller pans. You don’t want it to be jiggly in the middle but DON’T OVERBAKE.
Just a tip- when I make this cake or a chocolate cake that you want to be moist, I cover it with foil right after it comes out of the oven and it gets really yummy.

There's one from "The Balabustas Choice" which is called "Honey Loaves" It's on the heavier side, extremely easy to make (no separate eggs) and comes out delicious every time.

From the Green Nitra Cookbook Very Fluffy Honey Cake

12 eggs seperated
2 c. sugar
1 lb. (2 cups) honey
3/4 c. oil
juice of 1 lemon
1 tsp. cinnamon
3 c. flour
1 tsp. baking soda
1 tsp. baking powder


Beat egg whites until stiff. (I put the yolks in the mixer and the whites in a bowl, which I then stiffen with a hand mixer.) Gradually add 1 cup sugar, beating until stiff peaks form. Beat yolks with remaining sugar until lemon colored. Add honey, oil, juice and cinnamon. Sift flour, baking soda, and powder. Gently combine egg whited, yolks, and flour until well blended and there are no lumps. Turn into a apaper lined 10x16 inch pan or 2 (10 inch) tube pans. Bake at 400* for 15 minutes. Reduce temp to 325* and bake for an additional hour.

Incredibly moist honey cake recipe

I was setting my cakes on the counter to cool when someone came over to learn with my Dh. Served him some and he told me he's never had such a good honey cake in his life ("That's the first time I did not need a drink to wash the cake down.") Saw his wife today and she mentioned it too. She was glad to hear she'd be getting one from me before RH!

this is also "my" via pinktichel's fave recipe. I just made my third batch bc I used a loaf on shabbos for a shiur and DH was "concerned" about his Tishrei stash. Wink

Honey Cake Supreme

Ingredients
16 eggs
1 cup sugar
2 tablespoon vanilla sugar
1/2 cup sugar
1 1/2 cup honey
3/4 cup oil
1/2 tsp dry yeast dissolved in liquor
1 cup water
4 1/2 cups flour
1 1/2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon cinnamon

Instructions
Beat eggs whites with 1 cup sugar until stiff.
Transfer to extra large bowl.
beat egg yolks with sugars, honey and oil.
Add remaining ingredients.
Fold into beaten egg whites.
Pour into large roaster pan (2016) and bake for 1 hour & 15 minutes at 325.
