This is my 1st holiday dinner that I am hosting in my house... (which isnt too bad given that I married and moved in with my DH only 4 months ago) Since I work, I want to prepare the majority of the dishes throughout the week. I was wondering if anyone knew any recipes that will store and reheat well?!? Particularly any chicken recipes for the main dish?!?! I was thinking honey chicken but I'm nervous that it will dry out. I dont know if I want to use the crock pot for the main dish since it will probably be in use for the cholent.

my rule for the freezer is this:
cakes and cookies freeze well- just defrost at room temp.
challah- place directly into hot oven to defrost.
soups - freeze well
chicken and meats in sauce freeze well - defrost at room temp or overnight in fridge.
dry chicken or meat doesnt freeze well - prepare and freeze raw. defrost and bake before serving
kugels r mostly better fresh but if u place directly into hot oven their still good.
fish does not freeze well.

some things I plan to prepare in advance:
challah
roast, braised in sauce and sliced. (defrost at room temp or overnight in fridge)
cleaned spiced chicken bottoms. frozen raw. (defrost room tmp and bake as usual)
schnitzel. breaded and frozen raw. (deforst and fry before serving)
chicken soup with matzoh balls. (cooked, matzoh balls frozen in soup. defrost at room temp)
creamed butternut squash soup (defrost room temp. sometimes needs water when rewarmed)
farfel. (defrost room temp. add stock when rewarming)
potato kugel. (puor a little water on frozen kugel and place directly in hot oven)
squash muffins. (defrost at room temp.)

fish and side dishes to be made thurs.
prep work for fresh salads and vegi to be done thurs - fri.

I cook sweet and sour meatballs and they freeze well.

meatballs (however you usually make them). cook in sauce: can cranberry sauce, jar chili sauce, some onion soup mix.

then make plain rice right before yontif to serve with.

soup freezes great. so does cranberry sce.

I prefer most other food fresh, though.
