Any nice (EASY) ideas to use them up? Dh started a diet so I don't want it to be too fattening.

This is fried so I don't know how good it is for someone on a diet...
Add some eggs, fried onions and salt/pepper/garlic powder etc to the mashed potatoes to give it a doughy consistency. Form into patties and fry until golden (I guess you can bake these to make it healthier). These usually disappear really quickly at our house.

that's chremslach, no? My bubbe used to make it on pesach. Same like potato latkes but with cooked potato instead of raw. I hated them.

Its a little late for this, but I guess for future reference since I just came across this thread...the easiest thing to do with leftover mashed potatoes is to mix with some fried onions, margarine salt and pepper and put into a pan. Sprinkle generously with paprika and bake (for at least an hour...the more you bake it the softer it gets). Really yummy!
