ok, so I always thought corn was considered a starch. but apparently a LOT of people use it as the veggie in their meals! so what's the deal- is there any nutritional value in corn that would qualify it as a vegetable?

The answer is probably both. It does have nutritional value as a veggie with fiber etc.. but it also is like a starch.

It's a "starch vegetable" like potatoes. It's main nutritional value is the starch and it counts on most diet plans as a bread substitute. It does NOT sub for things like tomatoes and peppers.

but, the Irish peasants who survived mainly on potatoes and a little dairy produce (maybe meat on rare occasions) were extremely healthy, since that diet provided all their nutritional needs.

And cows are force fed corn so that their beef will be marbled with fat the way americans like them.
To answer the debate, your got your answer here (starchy vegetable, starchy enough to make a grain from it)...
People that are on restricted diets may not have corn.

It's a starchy vegetable. If you are trying not to eat starch than skip the corn. It's a vegatable but not very nutritious.

it's a vegetable - but one that if you're on a diet - counts as a starch ... unless you eat the husks
