I'm looking for any types of salads I.e. purple cabbage, Asia, Thai, Pomegranate etc. for Rosh Hashanah that don't contain nuts or vinegar. Any help is much appreciated! K'tsiva V'Chasima Tova!

you can try carrot pineapple salad...
shredded carrots, canned pineapple in its own juice
optional... cinnamon and rasins
make it a few hours in advance so it marinates

Try making the dressing for the sweet lettuce/craisin salad without any vinegar/lemon juice.
It should still taste great.

I found this recipe that I am planning to make! I'm probably going to add apples and replace the poppy dressing with another type of dressing. Obviously leave out the almonds!

Pomegranate Salad
(Serves 6)
Ingredients
Romaine lettuce
Spinach
Purple onion
Pomegranate seeds
Poppy seed dressing
(optional: roasted almonds)
Directions
Tear romaine lettuce and spinach into bite size pieces. Dice purple onion. Seed a pomegranate and toss seeds into salad. (Be careful, these seeds stain clothes.) Serve with a poppy seed dressing.
This salad is super simple (especially with pre-made/store bought dressing). It has crunch mixed with sweetness and tanginess. Any additional veggies or roasted almonds makes it even better.

Won't help for the no vinegar people though you may be able to adjust it. It's yummy so thought I'd add it for anyone else looking anyway.

Strawberry Salad
(recipe of a couple of friends, if they see this they will know who they are, just don't want to advertise names)

Fresh baby spinach as a base
Strawberries, halved or quartered
Avocado (optional, I'm not keen)
Mango (optional but is yummy)
Any other berries

Dressing
1 Tbsp poppy seeds
2 Tbsp sesame seeds
1/4 tsp wosterchire sauce
1/4 tsp paprika
1/2 cup sugar
Blend these in blender until mixed

Separate container
1/2 cup vegetable oil ONLY
1/4 cup apple cider vinegar
Add slowly to dry ingredients and blend

Dressing keeps in fridge. Sit jar in hot water if it solidifies.
