My friend made it the other day - IT WAS AMAZING!!!
1 graham cracker pie shell
1 butternut squash weighing 2.2 lbs. peeled cooked and mashed1/4 cup oil
1/2 cup light brown sugar
1/4 cup whole wheat flour
2 eggs
1/4 cup soy milk
pinch salt
preheat over 350 F
mix all ingredients together (aside from pire shell). If mixture is too thick, add a bit more soy milk. Puor this into the pie crust. There will be a little extra for 2 muffins or several mini muffins). Sprinkle top with cinamon and sugar and top with pecans OR make a crunchy topping with flour, brown sugar, oil/margarine and pecans (this is what my friend did). Bake for 45 min.
If you want the instructions for doibling the recipe, let me know.
