Some members of my family have an egg allergy. I do a lot of baking and I need to make sure no one gets ill. One problem is challah, the store near me seems to only sell egg-based challah. I would be fine with making my own but I need a great recipe.

This is the recipe I've been making for years
3 pkgs yeast dissolved in
1 C very warm water allow it to sit for 5 minutes
Add 1 C sugar
2 T salt
2/3 C oil mix well
Aternate 5 lb flour
with 4+ C water
Enjoy!

3 C flour
1/4 cup sugar
1/4 C oil
1 1/4 C Water
1/2 tsp salt
1 Tbsp dry yeast
take 3/4 cup of water and add yeast and sugar till it bubbles
Add all dry ingredients make a well and and add wet ingredients knead by hand (or in a machine if you have one)
If mixture is too dry slowly add remaining water till it gets to the right consistency.
Yeilds one medium challah. I usually quintuple the recipe and get 6 loaves.
I usually cover the top with one egg yolk and sugar, but you can sub it with a 1 Tbsp water and a tsp sugar. It gives the crunch a nice taste.
There is an egg free substance that you can glaze the challah with so that it will be shiny on top. I have to ask a friend about it as he has a sister very allergic and his mom uses it.
I glaze the top with oil and sugar mix. Everyone loves it.

my dd used to have an egg allergy
I just used my usual challah recipe but substituted 1/4 cup water for each egg omitted
and glazed with oil/sugar mix

this recipe is delicious and it makes at least 5lbs if you want to do hafrashas challah
4.5 T. Dry yeast
2 c. warm water from the tap- dont use boiling water
-let it sit and bubble for bout 10 minutes until it's all bubbly and it gets very high and fluffy
add it to a mixture of
1 bag flour + 1 cup
1.5 cups sugar
2 T. salt (it calls for 4.5 but it's too much)
4 c. warm water
1.5 c. oil
knead until its all mixed together well
let rise for at least 1.5 to 2 hours (more if u want. just keep punching it down when it rises too high and is about to overflow!)
make into challahs or rolls and bake- dont make too well done!
enjoy and if u like u can put sesame seeds or a sweet crumb on top.

I got pink tichels water challah recipe (no eggs) from another thread and it was so good. I'm making it every week now! If you can't find it I can post it again for you.
