Carrot muffins, cake, kugel
Carrot soup
Carrot salad (Morrocan)
Copper pennies (in tomato sauce)
Pureed carrots for the baby
Tzimmes
Soaked in lemon juice/salt with other hard veggies
Mixed in with potato latkes/vegetable kugel

Oh, let me count the ways...

The carrot muffin/kugel binah had in ther sukkos issue is a huge hit with my family. They are always begging for more and its very simple to make.

Agreed.

But, now on my new diet, I would need a healthier version. Anyone have one?

I love carrots in the chulent.

Lemony dill carrot salad.

Garlic roasted veggies with carrots are really good.

I googled this recipe for copper pennies. There are many recipes out there. I used to have one that called for a can of tomato soup. Just google and take your pick.

"COPPER PENNY" CARROTS

2 cans cooked carrots, drained (of course you will use fresh-Tamiri)
1 onion chopped
1 bell pepper chooped
1 small can tomato sauce
1/2 cup cooking oil
3/4 cup sugar
3/4 cup dark vinegar
1 tsp. prepared mustard
1 tsp. Worcestershire sauce
dash of black pepper

Place carrots, bell pepper, and onions in bowl. Mix all remaining ingredients and pour over vegetables. Refridgerate 24 hours.
The longer it sits the better it is. Fantastic spooned over hot cornbread.

Grate 'em up and freeze in small portions to add to soups, casseroles, tea breads like pumpkin and banana, muffins, meatballs, kugels--just about everything. Unfrozen they go in coleslaw, tuna salad, veggie salads. Cut into sticks, not grated, they go with dips like chumus and babaganouch.

In fact they're good for everything, except one: you CANNOT write with a carrot, even a nice, fresh, firm one with a good point on it.

I've tried.

Don't ask.

Lemony Dill Carrot Salad
• 2 cups grated carrots
• 1-1/2 Tbsp lemon juice
• 1-1/2 Tbsp extra-virgin olive oil

carrot rice: grate or chop finely 2-3 carrots in a food processor. Add with 1tsp salt and 1tsp chicken soup to 3-4 cups of rice being cooked as usual. the cooked rice will have nice orange tinge.

grated carrot salad: I like to dress it simply with equal orange juice and lemon juice, salt, olive oil, grated orange rind and chopped parsley. keeps for 2-3 days easily.

sweet and sour braised carrots and celery: peel and cut carrots and celery in matchstick sizes. Heat 1tbsp oil and sautee for 5min or so. Add 1 cup water, 1-2tbsp sugar, cook for 15-20min til vegetables are done. Turn off flame and add juice of 1/2 lemon (more if you want it tart). Can be served at warm or room temp.

I also whizz 2-3 carrots in a food processor, sautee with chopped onion. They make good base of tomato sauce (for pasta and for meatballs).

I was about to post the exact same question. I have bags and bags of carrots and don't know what to do with them. I already made soup, now what???
