There are tons of things to do in Manhattan, but it is very cold here, so you would probably want to focus on indoor things-
Some ideas:
Holocaust museum in Battery Park
going to the top of the Empire State Building or Rockefeller Center(Top of the Rock)
going to the Cloisters in Washington Heights
Madame Toussad
Museums in NYC

It will be quite cold--don't know if a horse and buggy ride would be enjoyable. (also did I say they smell of manure?)

I very much enjoyed Immigration Museum on Ellis Island. You take the ferry from the same place for the Statue of Liberty ferry. Outdoor ice skating either at Rockfeller Centre (will it be still open?) or Central Park.

Cloister area is peaceful and quiet but I thought it's mostly xtian/monastry kind of arts/sculptures? My favourite museums are Frick Collection and Metropolitan. I'm also interested in Neue Museum recently opened focusing on Austrian paintings like Klimt.
