OK what I would do is leave in a prominent place in the kitchen the Hebrew language cookbook I bought ages ago, with a note that says, "good luck! I'm sure you'll manage! Love, bandcm"
I know it doesn't answer your question but that is what I would do.

does he need to have different food each day? and can you freeze stuff?
meatballs reheat well. Schnitzle reheats fairly well.
make a big pot of rice, another of potatoes. Leave in the fridge or freezer preseasoned steak, chicken breast, salmon, and instructions on how long to grill them for.
Leave some nice fresh veggies for him to make salad.

I have gone away a few times, and what I have done is make a really big Shabbos, and then he has the leftovers.
After that's gone, he can make pasta or eggs for himself, or tuna fish.

why not just some bread and cold cuts, a tuna salad, some egg salad, etc. premade sandwhiches won't last a week.

freeze sandwiches for lunch (wrap each sandwich in foil, then place the foil wrapped sandwiches in a sealed plastic bag - stays fresh)
*tuna salad sandwich (tuna mashed with mayo)
*egg salad sandwich (egg mashed with mayo)
*deli sandwich with ketchup (bread/roll smeared with ketchup and layered with cold cuts)
for supper, all these freeze well
*meatballs and spaghetti
*meal in a bowl soup (split pea/barley/veggie/meat soup)
*hot dogs (have buns in freeze too, and sauerkraut in the fridge)
*burgers, baked (ditto with the buns)
*breaded chicken cutlets, baked, and cabbage and noodles side dish
*frozen fishsticks and frozen french fries
salads for lunch or supper
prepare lettuce in sealed containers. place little knotted baggies of cut up veggies to the container (each veggie should be in a different bag - this is the only way for the veggies to stay fresh and crisp)
add another little knotted bag of dressing to the sealed container
