So I have bags and bags and bags of barley. Some regular pearled barley and some unhusked. What can I do with this stuff to make a good side dish for shabbos to go with my chicken?

Heat some olive oil in an oven-proof pot. Add one chopped onion and some minced garlic, and sautee until soft. Add slice mushrooms, and continue to sautee. Add 1 cup pearled barley and continue to cook 2-3 minutes, until slightly toasted. Add 3-1/2 cups water and some chicken consomme powder. Bake covered at 350 for one hour.
