I made gefilte fish from scratch this past Shabbos, and it turned out very fluffy. I'm looking for a recipe for a more dense texture, like the gefilte fish loaves you buy and boil at home. Anyone have any tips?

put it in your mixer and mix fo at least 20 minutes. I do it in my Bosh .

leave out the eggs - My gefilte is egg free (due to allergies) and boy is it ever dense. Other wise I would say, add more Mtzo meal and/or beat it longer. When I make 'regular' gefilte with my grandmother, it's thick like cement before we boil it. you could also only use egg yolks as nicely beated whites tend to lead to fluffiness. Hatzlacha
