well, the amounts of sugar and lemon are relative to the amount of fruit. very little lemon, though, that I can tell you.

put a splash of lemon into the blender before the fruit. liquid should always go first when blending. blend up the fruit, add a little bit of sugar, then taste. if you want, add more sugar and repeat the tasting.

strawberries. definitely yummy. you can add some banana for a softer texture, but I prefer without.

you can really do this with any fruit, though.

2 cups sugar to 1 cup water with 3 tbsp. lemon. Boil to make syrup. Add 2 cups pureed fruit, like mango, strawberries, kiwi, melon. Mix and freeze for 4 hours, put into food processor and refreeze.

the fruits sorbet that they sometimes give at simchas. its in the original peel of the fruit, they just removed the fruit-blend it with something and put it back. I would love to know what to blend the fruit with.

anybody have an idea?

I posted this years ago and you can do a search to find out all the comments at that time, but it's handy so here it is again:

Ten Minute Sorbet
I got this from a ladies' magazine years ago . . .
Freeze unopened can of peaches or any 16 oz. canned fruit until solid, about 18 hours. Submerge can in hot water about 2 minutes. Open and pour syrup into food processing bowl. Place fruit on cutting surface and cut into chunks. Add to food processor and puree until smooth. Add 2 tablespoons lemon juice. Process until thoroughly blended. Serve or cover and freeze until ready to serve. Makes about a cup and a half.
