We have a ridiculous amount of left over challah from the first days that we didn't eat.
Does anyone have a challah kugel recipe that isn't sweet? That might be savory? Or am I just looking to make stuffing?

We make it savory (and call it "stuffing" kugel) -- just saute veggies of choice (we use onion, mushroom, garlic, maybe celery -- my mom also used red peppers, but I don't care for them in this), add the challah (I dry it in the oven first), a few beaten eggs, some seasonings, and some chicken broth (or chicken soup powder plus water) and bake uncovered for around an hour.

I've done the same as OOTbubby. Make stuffing, add egg, bake. I actually mixed in all kinds of veggies, mushrooms, sauteed onions, carrots, potatoes. I thought it was delish but the rest of the family was unimpressed so I've not made it since.
