Gravy made in a crockpot

I am making for shabbos a roast but want to make just the gravy in my crockpot to poor over the meat that will be sliced. I need a recipe that is good thick and wont desolve over night. Thanks.

I don't have a recipe, but I have heard that tapioca powder (it is pareve) is great for thickening things in the crockpot (as opposed to cornstarch).
