my 16 mo old only likes to eat foods that he can eat on his own while he walks around.. so I will give chicken nuggets or cheese but what are other good ideas for Nutrtitional breakfast/lunch/dinner type stuff that I can give, because otheriwse he can go without eating meals..

By "healthy" I'm assuming you mean proteins and vegetables? Here are some ideas.
Protein:
Fishsticks
tuna cakes
salmon cakes
toasted tofu chunks
cheese sticks (possibly sliced thinner)
Vegetables:
canned green beans
soft (but not too soft) carrots
grilled zuchinni
chunks of sweet potato
baby corn
Other:
pieces of pizza, french toast, grilled cheese, etc.

Muffins, I make mine with baby food,
But are you sure you always want to be chasing around your little one? I know it happens but oh the crumbs! And with Pesach coming,,,

my kids walk around with a banana for luch

Grilled or toasted cheese sandwiches are pretty neat.
My DD loves toasted waffles - we get the Nutrigrain kind in huge boxes from BJs.
Veggie patties also go over very well, like morningstar garden veggie burgers. Vegetable latkes are also neat!
Try making an omelet with vegetables mixed in and giving him chunks or strips.
Another way to sneak in veggies or fruit is to make smoothies - use yogurt, puree it as smooth as possible, and put it in a straw cup (one without a tight valve - the Take and Toss kind are good for this). Smoothies and omelets are two ways that I can get DD to snarf things like spinach!

My 17-month old can't sit still for 2 seconds, and most of the above suggestions work well for me.
To add to the lists, DS likes broccoli "trees", pancakes (I make whole-wheat ones with pureed carrots or squash), "chunky" pasta (like rotini, wagon wheels, etc.), orange segments (the juice makes a huge mess, though)... I gave DS a whole hotdog to hold and nibble at once, but later found out that they're a choking hazard.

Cheese pancakes are easy: 1/2 c. cottage cheese, 1/2 c. flour, 1/4 c. sugar, 2 eggs beaten and cinnamon to taste. Heat a frying pan with a little oil and drop some batter by the spoonful like pancakes.
