(from one of the Pesach cookbooks- don't remember which)
6 eggs, separated
1/4 tsp salt
1 cup sugar
1 raw sweet potato, peeled and cut into chunks
1/4 cup ground almonds
1/2 cup oil
2 Tbsp cocoa
In the bowl of a mixer, create a snow, starting with the egg whites and salt. Once the whites start to become frothy, begin adding the sugar a bit at a time. Continue beating until peaks form.
In the meantime, in a food processor fitted with a knife ("s") blade, process the sweet potato. Add the egg yolks, ground almonds, oil, and cocoa, and continue to process until uniform.
Fold the chocolate batter into the egg whites.
Pour into a greased 5 x 8 pan, and bake uncovered, in oven preheated to 350, for 1 hour and 15 minutes.
(Or use a 9 x 13 pan and bake for 1 hour.)

My daughter saw something similar and was wondering how it would turn out. Looks interesting! Do you think it would work without the almonds?

I'm pretty sure there was a similar recipe in The Heimishe Kitchen's Pesach cookbook without cocoa, and probably without almonds. I have it at home, but won't be able to check it out till tomorrow. Maybe someone out there has it.

abound wrote: | think it would be good without the cocoa? | The cocoa hides the sweet potato, and gives the cake a bit more flavor, but if you process the potato really finely, and then make a smooth batter, it should still be good without it.
