Fun Fish Packets
got recipe online, but I don't know where exactly
2 T olive oil
2 cloves garlic
oregano or Italian seasoning
salt and pepper to taste
tomatoes, cut up
zucchini, cut up
fresh or defrosted fish
fresh basil or parsley
You take a piece of foil, one for each piece of fish, and spray with non stick cooking spray. Divide your cut up zucchini into equal amounts on each packet. Put fish on top of zucchini.
Mix tomatoes, olive oil, garlic, and your seasoning, in a bowl. Spoon onto your fish. Fold up packets, place on cookie sheet and bake at 450 for about 20 minutes.
Serve hot or cold.
