I made a lemon meringue pie...and somehow have enough meringue left over for a 2nd pie! I don't really want to bake meringues ("neshikot")...can it be stored in the fridge for future use? Frozen? Or what else can I do with it?

you can't freeze or store whipped egg whites. just bake the cookies. you can store them outside the fridge.

I don't have SPACE to store them outside the fridge. And if I put them IN the fridge they'll get soft.

I don't get it. you have already whipped egg whites to make a pie topping.
wny can't you bake the leftover batter as cookies? put them in a ziplock bag and stick them anywhere, even in a cabinet.

pardon my ignorance, I thought all mousse was made from meringue - well, I found out differently after doing a search here on the site. But I did find one that seems to be close to the original French recipe:
