This is the first time I'm making challah with a bracha on a Thursday night to get "credit" for Friday -- not sure exactly what time to do it? I always make the bracha right after making the dough before putting it out to rise, but wondering if I can take challah after it rises, so I can start a couple of hours before sunset? And which "sunset" time would that be, shkiyah, or when the stars come out? (Hoping to avoid staying up until midnight baking, LOL) Thanks!!

I usually take challah after the dough has risen for the first time.
