Is there a recipe for chicken (can be cutlets), that isn't dried out for shabbat lunch?

Just bring your chicken cutlets to room temperature. Take it out first thing in the morning, and let it rest on the counter until mealtime/room temperature.
Slice on the diagonal, and plate prettily.

not suitable for cutlets, but you can do tebeet (which is baked chicken with rice). I've posted recipes before. You can also do chicken curry which you can leave on plata. If it doesn't have to be hot, coronation chicken has nice creamy dressing that prevents drying.

That's what I do too. Also try not to overcook the cutlets. You can serve with a dipping sauce to mask the dryness if you'd like.
