Chicken w/grapes
from Hadassah on FB who redid a Martha Stewart recipe
chicken, any kind
onions, cut up
handful of grapes, halved if possible
rice, optional - raw or leftover
If using raw rice, add to pan. If not, proceed to next step.
Cover with a cut up onion or two. Put your chicken on top of the onions, drizzle a little olive oil and pepper on the skin, then arrange your grapes on top. Bake, uncovered, at 375 for about an hour. The grapes are supposed to pop open and add a lovely flavor to your chicken. Mine did not. Therefore, I advise you to half them if possible.
If using leftover rice, after chicken has cooked and cooled sufficiently, move the chicken around so you can stick the leftover rice under it. Put the chicken back.

I didn't add any and I noticed that the rice looks really dry and hard.

Saved this recipe. I'll have to adapt it for stove top...but it sounds delicious. I think I'll do it Rosh Hashanah.
