Use pinktichel's recipe:
chicken cutlets, cut thin
1 part soy sauce
1 part honey
1 part oil
corn flake crumbs
Marinate cutlets in equal parts soy sauce and honey (a few hours to overnight).
Dip in cornflake crumbs.
Arrange on parchment paper lined cookie sheets. Bake uncovered in oven preheated to 375 for 25 minutes. _________________ Really Awesome Mom!

In this situation, I like to make pastrami chicken.
1 slice of pastrami (or even the less expensive deli meats) for each cutlet. Place it on the cutlet, roll it up and place in baking pan. Add oil to the pan, sprinkle with bread crumbs. Bake 350 for 30 mins. Can substitute duck sauce for the oil as well.
If you use fresh ingredients, this can be frozen raw weeks in advance then thaw and bake when needed.

I use the following super easy recipe:
I fry or bake the cutlets - in eggs and cornflake crumbs for frying, and mayonnaise and cornflake crumbs for baking/
Sauce:
1 cup ketchup
1 cup water
1/2 cup brown sugar
sesame seeds
Mix and pour over nuggets
Bake covered for 20mins - 1/2 hour.

honey chex shnitzel
4 chicken cutlets ( I like to use the dark)
2 cups flour w/ 1 tsp salt & 1/4 tsp black pepper
3 eggs beaten
1/2 c soy mik
dash of pepper & salt
4 cups honey nut chex cereal
3 cups corn flakes ( the cereal not to crumbs)
1 TBSP onion powder
1TBSP garlic powder
1 tsp salt
1 tsp black pepper
1 tsp paprica
1/4 c brown suger optional ( I use it )
approxoimately 1/4 c canola oil.
trim & cut the cutlets to desired size & place on plate.
in a ziplock bag add together the corn flakes & checks w/ a rolling pin crush them dont
grind them its ok to have pieces of cereal recognized. set up 3 bowls
bowl # 1;flour salt & pepper mixrure.
bowl # 2;mix together eggs soy milk & season w/ more salt & pepper.
bowl # 3:mix together cerael w/ remaining spices
personally I prefer to triple dip all my cutlets & then fry them all together, but u can defenitly
dip & then fry right away. if u let them sit fot even 5 min the coating stays on better.
tripple dip method:
dip #1 dip each chicken into flour mixture.
dip #2 dip each pc till evenly coated.
dip # 3 dip cereal mixture.
heat oil in frying pan fry cutlets till brown on each side, approximattely 5-6 min
serves about 4,its a little work but its realy worth it)

If you can, buy them fresh so you can slice thinner, pound, etc.;, flash freeze and then it will make the actual prep easier.
Even easier is a recipe that you can prep raw and freeze till you need. _________________ The righteous praise and honor people for every good quality that is found in them while the wicked seek out faults in others to pull them down, even if they repented those deeds.
