I can never figure out when to make latkes

I don't get home early enough to cook them before dark, and there's something about not cooking while the candles are burning. But by the time they're out, everyone has eaten. How do you do it?

The not cooking part is only for the first 30 minutes the candles are burning. You can do melocha again after that.

Our rav holds that I can't do laundry and things like that while that candles are lit, but cooking is okay.

Maybe ask to make sure?

Or, you can serve them as a sort of "dessert" or "late night snack"?
