Scalloped potatoes on a blech

I am going to my mother's for Shabbos dinner, and she asked me to make scalloped potatoes. If I make them today and put them in the fridge and then put them on the blech at her house before Shabbos, how does that work? I have never heated food up on a blech before, and especially scalloped potatoes.. Will they taste good and fresh still? Will they burn? What else can I do?

I have, it does work if the food is defrosted, but I think it is better to warm it in the oven first. We haven't an oven so we can't.
