Don't think "cooked"
Think RAW.
Lots of salads, fresh herbs, fresh vegetables. For the course where you want more cooked stuff, think quinoa tabouli, simple roasted vegetables. If you're looking to go healthy and low carb, load up on the salad course, and find ways to include nuts for healthy fats and to make it filling. Pine nuts roasted with asparagus is good, as are walnuts, almonds, sunflower seeds, cashews etc roasted in salads or blended into dips.

my carbs on shabbos is basically the challa and the grains in the cholent. and the relatively little bit in the fish rolls

I fill up on salads and on the soup and a little chicken(cooked in the soup) at night. sometimes fresh fruit

morning is challa, salads, fish, eggs , and cholent (I tend to eat the grains versus the potatoes and kishka)



honestly, shabbos is the most low carb day for me than the rest of the week


btw, I usually dont bother with dessert, I find that its not neccessary
