I saw a recipe that uses Kohlrabi. I've never used this vegetable, so I'm not sure what the nature of it is.
Is this a vegetable that can be peeled? Or is it more like a cabbage?
(We only use veg that can be peeled so I want to know if I can use this recipe.)

it must be peeled. it has a thick green peel and the inside is white and has the texture of a firm apple.

I like using kohlrabi, they taste potato like in soup and are crunchy in salads.

It's a turnip kind of vegetable. Needs to be peeled.

Can be shredded, like you would carrots in a food processor, for mock cole slaw (instead of cabbage.)
Can be cut into sticks and seasoned with olive oil, lemon juice, and salt.
Or can be cubed and cooked in soup.

It's to add to the egg roll recipe in Spice and Spirit. I read that it tastes like cabbage and that it holds up in egg rolls, so I thought I would try the substitution.

BTW we love eating kohlrabi raw. I always serve chunks at the Shabbos table (along with carrot sticks) and it gets demolished.
