My dd had her tonsils and adenoids out 5 days ago. I know they said her voice might be different for a couple of weeks, but she sounds *very* nasal-y. Is this normal?

There is probably some swelling from the surgery, so the air will pass more through her nose and make her sound quite nasal. As the swelling goes away, she should sound like herself again.
