I'm starting to plan my menu, need to see other menus and get ideas. So, who's ready?

I'm only being home for 3 meals, the last days. Here's what I have planned so far:

First courses:
the two Shabbos meals, gefilte fish
Other meal - meat blintzes

Soup:
Chicken soup
or onion soup from Binah

main dishes:
roast
lemon chicken
some kind of regular chicken
3 kinds of schnitzel - dipped in matzah meal, crushed potato chips, and ground nuts
Pesach cholent for Shabbos

Side dishes:
|I'm for sure making one egg-free kugel, for my allergic kid. (zucchini-potato)
Apple-carrot-sweet potato kugel from Hamodia
squash kugel
apple kugel - probably for Shabbos day
sweet potato pie
Maybe potato puffs. I'm having lots of kids, and this seems kid-friendly.

desserts:
chocolate mousse pie
chocolate meringue cke
layered ice cream cake, from Hamodia

Apple Carrot Sweet Potato Kugel

6 apples
1 large sweet potato
2 large carrots
- cup sugar
Juice of lemon
Pinch salt
3 eggs, lightly beaten
1/3 cup potato starch
2/3 cup oil
Peel and shred apples, sweet potato and carrots. Place in a large mixing bowl. Add remaining ingredients. Mix well. Pour into a roaster pan or 2 9 inch round pans. Bake at 400 for half and hour and at 350 for 1 hours.
Can I have the recipes for mock chopped liver and roast with potatoes and carrots? Thanks!

Never made it,I'm pretty sure I got it from here last year. Here's the recipe:
Potato Puffs
1 onion
4 Tbsp oil
4 potatoes or sweet potatoes, peeled and cooked
2 eggs
7.5 Tbsp potato starch (instead of 3/4 cup flour aka 12 Tbsp flour)
salt and pepper to taste
1 more egg, for egg wash

Sauce an onion until soft in 4 Tbsp oil.
Cook up potatoes/sweet potatoes; mash. Add eggs, potato starch (flour), salt and pepper; mix well.
Spray cookie sheet very well with cooking spray. Scoop out potato mixture (with an ice cream scooper) to form little puffs on onto cookie sheet.
Brush / smear top of puffs with egg.
Bake uncovered at 400 for about 1 hour.

Tomato & Basil Tart
1C matza crumbs
70g melted butter
800g tin chopped tomatoes
2 tblspns olive oil
3 garlic cloves, thinly sliced
1 tblspn sugar
1 cup grated mozzarella cheese
handful basil leaves, thinly sliced
1/2 cup grated Parmesan
salt and black pepper
extra basil leave to garnish

1. Crush the matza, add the melted butter and press into a medium sized pie dish.
2. Chill in the freezer while preparing the filling.
3. Heat the oi, add the tomatoes and garlic and cook over medium heat for about 20 minutes until thick.
4. If the tomatoes are still very juicy, turn up the heat and continue cooking to dry the moisture.
5. Mix in sugar, mozzarella, basil and seasoning and pour over the crumbs.
6. Top with Parmesan and bake at 180C for 15 mins till cheese has browned.
7. Serve warm or at room temp garnished with extra basil leaves.

I think the Onion Kugel is from someone here -

Onion Kugel
5 onions, thinly slices
1/2 c oil
1/2 c water
1 tsp salt
1/4 c mashed potato
1 c matza meal
2 tsps baking powder
5 eggs
pepper
onion soup mix

1. Mix all the ingredients together.
2. Bake in 350 oven for one hour.

Oh my goodness OOTBubby I am stuffed just reading your list!

One thing I can say is that I am sooo glad I don't have to make seder twice or sit down to one twice! That definitely has to be one of the benefits of making aliyah!!!

I don't remember amounts too well but...I'll try.

For the meat:

I buy chuck deckel or roast. I fry onions (we use shmaltz) and sometimes add potatoes & carrot slices (sometimes just onions) on top of onions. Put the meat on top. Pour wine- 1/2 cup or more, and add salt, 2-3 tsp. Then cover the pot and let it cook on med-low for hours. you can pour the sauce over the roast while its cooking. When you slice it, pour some sauce on it for fancy & tasty serving. Yummm!

Mock veg chopped liver:

Chop onions & eggplants to small cubes. Fry (again I use shmaltz. It therefore adds flavor & isn't pareve/vegetarian anymore) together until soft and golden. Boil eggs then put fried veg & eggs in food processor with salt. Mix it until you reach the consistency you prefer. I preferred not totally creamy. Everyone licked their plates clean Wink

Rocky Chocky Ice Cream (from Family First -- I think in 2010 or 2009)

Ice Cream
6 eggs, separated
1 cup sugar, divided
cup oil
cup water
2 tbsp. vanilla sugar

Beat egg whites until they're stiff, gradually adding cup sugar. Combine yolks, oil, water and remaining sugar and blend until smooth using either a hand blender or a food processor (I do it in a mixer). Add vanilla sugar. Fold this mixture until the whites.

Chocolate Chip Cookie Crunch
2 eggs, separated
cup sugar, divided
1 cup (6 oz.) ground almonds
3/4 cup chocolate chips (I like mini ones) or regular chocolate cut into chunks

Preheat oven to 350. Beat whites with cup sugar. In separate bowl, combine yolks with remaining sugar. Add this to whites. Fold in ground almonds and chocolate chips. Line a 9 x 13 pan with baking paper. Spread batter over paper. Bake for 15 minutes. Transfer to freezer and freeze 15-30 minutes. Remove from freezer and break into chunks with a fork. Return to oven for 20 minutes more. Cool. When cool, break into chunks.

Chocolate Fudge Sauce
cup sugar
1 tsp. vanilla sugar
cup cocoa
dash salt
cup water
1 tbsp. oil

Bring ingredients to a boil in a small saucepot.

To assemble:
Pour ice cream into a lined 9 x 13 pan. Sprinkle 3/4 of cookie crunch over ice cream. Drizzle half of fudge sauce over this. Marbelize chocolate and crunch with a knife. Sprinkle remaining crunch on top of ice cream and drizzle half of remaining fudge sauce over the top. Cover and freeze. Use remaining fudge sauce to drizzle on serving plates before serving.

We're vegetarians, so here are our dairy seder menus:

1st seder:

Purple cabbage salad
Carrot-dill soup
Baked quinoa and spinach cheesy casserole
Matzah meal polenta with sauteed mushrooms
Roasted root vegetables
Matzah crack (praline & chocolate on matzah)
Chocolate-chip cookies

2nd seder

Portobello mushroom salad
Butternut squash & roasted chestnut soup
Eggplant Parmesan
Roasted Brussels sprouts & cauliflower
Brownies
Fruit

I'm also making a Turkish charoset with almonds, figs and dates that is very yummy.
