Oatmeal pancakes

A friend gave me this recipe and my kids love it. Its a great filling breakfast and has healthy ingredients too.

2 cups buttermilk or plain kefir (I use regular milk with a Tablespoon or 2 of vinegar)
1 egg
1 1/2 cups old fashioned oats
1/2 cup whole wheat flour
1 Tablespoon sugar (I use raw sugar)
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt

Mix all, let sit 15 minutes. (I prepare it the night before and leave it in the fridge).
Fry as you would regular pancakes. (okay, so this is not the healthiest part, but minimal oil or butter works fine).

I can't imagine it wouldn't work. I have used almond milk for any and everything. It would probably work with water even though wouldn't taste the same. Any liquid will do.

Sounds good. I've never tried giving pancakes for breakfast. Do they eat it on its own?

Absolutely, my 18 month old thinks they are cookies and loves them. Thanks for the recipe, I will definitely try it.

I sub some of the flour for ground flax seed.
and I never use butter or oil - they come out much nicer - with a "smooth bottom" but I guess that is if u have a teflon coated pan

Plain is fine. Can also serve with maple syrup, sugar, agave....
