ISO Scalloped Potatoes WITHOUT Mayo

Does this exist? I would love to make this but I have found that Mayo really does not agree with me. Can I make a regular white sauce with flour/margarine and almond milk and pour it over the potatoes? TIA! Its already time think about whats for shabbos.

I make a dish that I call scalloped potatoes. It just has sliced potatoes, fried onions, water, salt, paprika and pepper and it's delicious, but takes a really long time to bake. (first covered for at least an hour then uncovered for at least another hour.

KBP Scalloped Potatoes with Wine (with adaptations by cbsmommy)

Ingredients
1/2 c. olive oil
5 lbs idaho potatoes scrubbed, peeled and sliced thinly
1 1/2 c. white wine (You are supposed to use something like Chenin Blanc but I just had white zinfandel so I used that)
6-8 cloves minced garlic
1/2 c. water (I used veggie broth from a box)
1 tsp. dried oregano (I omitted)
Salt and pepper to taste


Preheat oven to 450 (I made this in a 350 oven on yontif by cooking 2x as long). Mist 2 9x13 pans with olive oil, then layer potatoes in a slightly overlapping manner. Combine the spices with the olive oil and drizzle evenly on top of potatoes. Add wine and broth (or water) and bake covered for 20 minutes. Uncover and bake an additional hour (took 2 hours with the oven at 350, but hey, it was yontif and my oven was on anyway).

Tastes AMAZING!

Thanks! I don't know much about wines, I'm assuming I shouldn't use a sweet wine for this?
