I was looking for a dairy free recipe for pancakes, didnt find anything I liked so I made one up and it came out awesome!
2 egg whites
1/4 cup oat flour (just oats blended to powder in blender)
1 scoop of vanilla protein powder (optional- I did less than 1 full scoop)
a few shakes of cinnamon
2 TB of apple sauce (can use up to 1/4 cup)
1/4 tsp baking powder
Mix with fork, Pour into pan and cook like pancake.
I drizzled maple syrup over the top.
Was so good!

Looks interesting. I'm excited to try it out. The strangest thing is I was just looking for a recipe with oat flour. Thanks!

You can use any recipe and replace the milk with rice/almond/soy milk, or even water. Actually, I rarely make milchig pancakes. I always use water.
