It could be sweet, savory...whatever (as long as its delish)
we just have tons of leftover challah and my mother requested a challah kugel
(I know there are loads of other things to do with the bread but im looking for a challah kugel recipe)

Do you want sweet or savory?
I wish they went in my family.
If you have lots of challah to get use up there are cheese stratas and other types of casserole recipes out there.

This isn't exactly a recipe, just something I figured out on my own. I never really liked the sweet variety, so when I do it, I do this:
Break the challah into chunks and soak it in water for 15 minutes. Then ring it out. Mix with two eggs. (Or more if you are using more challah.) and a bit of oil Sorry, I don't have specific amounts of challah in mind. I just guess what will equal the total of about one challah.
Then I saute a lot of onions and garlic (the more the better) and add salt and pepper, Italian seasoning, or basil and oregeno, garlic powder and sage, and any spice I like. Mix all that into the challah and egg mix.
Put in in the pan you will bake in and then bake in the oven at 400 degress F for 1/2 hour. Then leave in oven for 1/2 hour.
(This method and baking time and temperature are from the Simple Pleasures cookbook, except they have a sweet challah kugel. If you want their sweet recipe, you can mix in some raisins, sugar and cinnamon. I used to use apples instead of raisins.)
