When to let the challah dough rise?

I have always let my dough rise, punch it, rise again, braid and bake right away. I am wondering, is this what people do? I know some let it rise after braiding, but my question is, if that's what you do, would you braide it after punching it down the first time? Thanks!

Yes. Let rise once. Pour out of the bowl and let it rest on the counter 10 mins. Then braid and rise a second time. Then bake.

I dont punch it down at all, I let it rise for an hour outside the bowl already, then I braid it and let it rise for about another half hour.

I let it rise, punch down, braid, and rise again. Everyone does something different - why don't you do what your recipe calls for?
