ISO potato knishes recipe

Hi everyone! I see many mentions of potato knishes with mushroom sauce on menus on this site. Not having luck finding recipes though... Can anyone help? Freeze-ability info would be appreciated. Thanks!

This recipe is really good- it is 2 tone (potato and broccoli) so it looks beautiful when you cut it.
I substitute regular white potatoes for the sweet potato.
For me the fact that you are making your own (super simple) dough is a plus because I can't bring myself to use brought puff pastry, though I am sure you can just use that if you want.

The recipe is from the Binah Magazine

Two tone potato knish
Dough:
2 eggs
1/2 cup oil
1/2 cup warm water
3 cups flour (I use white whole wheat but you will need little more liquid)
1 tsp baking powder
1 tsp salt

Sweet potato filling:
2 medium sweet potatoes, cooked and mashed
1 egg
1 tbsp mayonaise
1/2 tsp salt
1/4 tsp garlic powder
1 1/2 tbsp flour

Broccoli filling:
1 lb chopped broccoli- cooked and then mashed.
1 egg
1 tbsp mayonaise
1 tsp onion soup mix (or spices)
1 1/2 tbsp flour

Topping:
1 egg
sesame seeds

Directions:
In large mixing bowl, combine dough ingredients. Knead together by hand until they become a soft piece of dough. Set aside
To prepare fillings, combine the ingredients and let cool.

Preheat oven to 350, line a cookie sheet with parchment paper.
Divide dough into 2 equal portions, Place half the potato filling slightly to the side of center of the dough. Place half the broccoli filling right next to the potato filling with both fillings going straight down the center of the dough. Fold in the two ends and then bring the two sides in to the center and pinch together. Carefully lay the knish seam-side down on the cookie sheet. Repeat with second portion of dough.
Brush knishes with egg and sprinkle with sesame seeds.
(you can freeze at this point)
Bake for 45 minutes

(if you freeze the knish raw, egg and then put straight in the oven frozen and add 15 minutes more baking)

Thanks for the replies- especially rise above for taking the time and effort to type all that up! I made dough less knish kugel for r'h and served it a couple of times so wanted something different. And that sweet potato/ broccoli knish sounds yum, but not appealing to my picky kids. Was looking for a recipe for regular potato knishes that can be served with mushroom sauce. Unless I should just use rise above's dough and fill with my own potato filling?
