My sister told me once she made celery soup. I love celery but she's at work. Anyone have a good celery soup recipe?

Is it cream of celery, or celeriac (celery root)? This one should work with either.
You basically chop celery (or celeriac after peeling) into small bits, also chop an onion or two. Heat small amount of veg oil in a big pot, sautee very well stirring frequently. Let it sweat for a long time, like 20min or so. (Don't skimp this process). Season and add water just enough to cover the vegetables and maybe a few inches above. Cover and cook for another 20-30min till vegetables are tender. Dilute 1tbsp sauce flour with 1tbsp lukewarm water, stir into the soup and cook for a few minutes till thickened. Blend with a hand-held liquidizer. Check seasoning. Add parve cream and reheat but without boiling.

I second the above recipe! I make mine with Tofutti "Better than Sour Cream" and it is amazing. It works really well with mushroom and leek soup, too.

This is an award winning recipe! Always get rave reviews!!
1½ tsp oil
1 medium potato, diced
1 small head garlic cloves
3 onions, chopped
5 celery stalks, diced
2 tsp chicken soup mix
3 cup water
- salt and pepper, to taste
Saute onion in oil. Add the rest of ingredients.
Cook for 1 hour.
Blend well. Reheat.
You can add shredded cheese.
