I'm looking for an easy parve dessert recipe, preferably something that can be made before shabbos without margarine that I can serve in small glass dessert cups. Any ideas would be greatly appreciated!

Pots au chocolat

* This is VERY dense, so best served in those tiny clear plastic cups with
a mini teaspoon. You can decorate with some cut fruits on the top, berries
and kiwis and pomegranate seeds go well to offset the richness

1 bar (1lb) high quality cooking chocolate (pref swiss ones, min 40% cocoa solids)
150cc parve single cream (we use Oatley single cream)
2 eggs

Break up/chop chocolate into small pieces. In a thick-bottomed non-stick pot,
pour parve cream, add chocolate and start heating over a very low flame.
Make sure you stir continuously so it melts evenly and the pot doesn't burn.
Cook for 2min or so without boiling once all chocolate is melt. Remove the pot
from the flame, add 1 egg and beat vigorously so that the egg doesn't curdle.
Remove the pot from the flame again and do the same with the other egg.
Cook for 1more minute and remove from fire. Pour into a plastic container and
let chill overnight. It's very liquidy but should set once chilled.

1- Pre-made chocolate chip cookie dough (or homemade)
2- Pareve chocolate

Pre-heat oven to 350. Press enough cookie dough into the bottom of a muffin tin to cover (should be about 1 cookie's worth, or one square of the Ostreicher's pre-made cookie dough).

Put a square of chocolate on top (I don't recommend going higher than 55% if you're using a plain chocolate; it's way to intense and rich).

Cover with another square of cookie dough. Press to seal.

Bake for about 12 minutes.

(I got this recipe from a friend. She sprayed the pans before she filled them, but I didn't know that. I had no problem getting them out.)

Pareve strawberry ice cream: One container of dessert whip + one carton bodek frozen strawberries. Defrost both, whip together in mixer with whisk attachment, then pour into individual cups and freeze. Delicious and so easy! Multiply quantities as necessary, that is the basic ratio. Also a plus, no raw eggs!

Those chocolate cakes microwaved in a mug. But in your nice glass cups, not in a mug. I suppose you could microwave a few at once. I suppose you could multiply the recipe and dish it out into each cup before microwaving.

You might put sprinkles on top, right before serving them. Or any syrup or icing.

I love this. It doesn't look SO romantic in real life, but very pretty. And very easy!

Maybe this is too obvious, but macerated strawberries.

Cut strawberries into slices. Add sugar and a bit of lemon and lime juice and mix. Taste to make sure the sweet/sour balance is to your taste. Cover and put in the fridge and wait a couple of hours. The strawberries will release their juice and it will make a beautiful red sauce. It will keep in the fridge for a few days.

You can serve as is or top with a mint sprig, pareve whip, put a cookie on the side, or any combination of these. You can also just top with toasted almond slivers or coconut.
