We have tried a few different sefarim to read over the Shabbos table, but none of them have panned out; not engaging enough for the variety of guests we have on any given shabbos/ something that you can just listen in to and understand without needing to have followed along the whole time/ short, sweet and to the point.
Have any of you ladies been successful and following through with a sefer? What are some recommendations? (english only)

We've done Chofetz Chaim. I don't remember which book it was though but it was like one page per lesson.

Some weeks we also learn mishnayos. We go around the table and whoever wants to read/translate/explain does so.
Both of these activities promote plenty of discussion. .

we keep it very short, read one or two lines.
its engaging enough for majority of adults.. pertains to everyone..
key is to keep it short

You don't say how old your children are, but here are a few that we've used which are great. We have kids in elementary school through college.
What If - Rabbi Yitzchok Zilberstein
Mashal Tov - Rabbi Yeshaya Greenberger
Do You know Hilchos Shabbos - Rabbi Michoel Fletcher
Rav Levi Yitzchak of Berditchev - Rabbi Yaakov Yosef Reinman

Thank you so much for your helpful responses.
Which sefer do you learn shabbos halachos from?
My children are young elementary school to babies. We also have a lot of guest almost every shabbos meal...mostly high school/ slightly post high school age.
TIA again

we read chasidic stories...usually from tales of tzadikim...they have several stories for each parsha
we've also done "the family lesson a day" (chofetz chaim) which is a page a lesson
