The Quick Lemon dilly Chicken soup
olive oil
1 1/2 cup onion
garlic
soup broth or water (if using water, add some carrots and zucchini)
2 cutlets, bone-in if possible
dill
You sautee the cut up onion in 1 T olive oil and add the 2 cloves of garlic and cook until soft. Add 6 cups of broth or water (and your extra veggies) as well as the chicken, cook about 20 minutes or until chicken is done.
Add orzo if desired, 5 oz baby spinach, some fresh dill and 2 T lemon juice to serve.
