I have lots of sliced hard cheese (not processed) - usually we use it for cheese toast/sandwiches/lasagne topping, but I was wondering if there's anything interesting it's particularly good for? I know it can melt into anything e.g. pasta and cheese, but I'm looking for something new and exciting Wink

melt on top of veggie burgers
nachos

(you can use it on pizza, I do that sometimes, just doesn't look as nice as shredded)

You can always freeze them (if sliced, I recommend inserting wax papers so they won't all stick together).

cauliflower and cheese
mac n'cheese
cheese scrambled eggs
cheesy grits/polenta
served with jacket potato

Take a thin slice, put it on parchment paper, microwave until it becomes hard and crunchy, about 1 min, you need to let it cool first. They call this a cheese tuile, I call them cheese crackers.

I forgot this one... cheese fondue!!

1/2pt dry white wine or milk
16oz grated cheese (the authentic recipe calls for gruyere which tastes a bit bitter to me)
1/2 tbsp. cornflour diluted in 2tbsp of wine/milk from above.

Rub the inside of thick small pot with garlic if desired. Gently heat liquid, add grated cheese gradually till it melts. Add diluted cornflour and continue to cook on low flame. make sure it doesn't boil lest it would separate.

You can dip bread, cooked potato, cooked vegetables.

put some on apple pie. (I admit to never actually trying this or assuming it's good. but apparently it used to be a "thing.")

melt some on broccoli. yummy.
break it up into salad.
make a cheesy soup.
use small cookie cutters to turn them into shapes and put them in your kids' lunches.
make wraps
tuna melts

No reason to rush to use it up. You can freeze and it'll still melt well for future use.

Wow, thanks everyone! Fabulous ideas here!

I usually freeze it, but one still needs to use up frozen slices cheese, y'know?

Got it. I'm finding all sorts of interesting stuff from foods that I froze after using up as much as I could ;-)
