Saute onion. Put in crockpot.
Add:
Carrots
Sweet potatoes
Peeled squash
Put in chicken, skin side down. Add a few cups water (4 or so).
Enjoy

Forgot to tell you to rub spices on the chicken before you place it in the crockpot. Use salt, pepper, garlic powder and paprika.

that sounds good! does the chicken fall apart by shabbos day? or it still looks nice to put out on the table? also, I have butternut squash...will that work? do cook it and set to "keep warm" right before litch bentching, or put it up right before shabbos and let it cook overnight on low?

Butternut squash should be fine.
I have never made it in a crockpot before, so I would guess that you put it on high until Shabbos, and then put it on low/keep warm. Check if there is enough water (it shouldn't be a soup, but it should have enough liquid.)
The chicken gets very soft (that's why it tastes so good), so when you take it out, I suggest you use a big spoon and handle it delicately. It does stay together- but be careful when taking it out.
